1日,职工鱼丸友谊赛暨民俗文化交流活动在连江县琯头镇举行。来自连江和马祖的400多名职工代表同台竞技,共烹最美家乡味道。

连江职工代表和马祖职工代表分别组成3支和2支队伍参赛,大家争分夺秒按步骤制作鱼丸。选手们将海鱼开肚去肠,切成片,用铁勺沿着鱼脊骨将鱼肉刮下,将鱼肉和淀粉按比例混合,投入搅拌机混合均匀,制成鱼糜,在肉泥里加入调料,搅拌均匀后,鱼丸馅料就制成了。鱼糜包裹肉馅,一放一捏,一颗颗鱼丸就从拳间“滑”入锅中。

马祖乡亲陈昱荣兴奋地说:“鱼丸是我们共同的遗产,希望以后子子孙孙都传承下去,把祖先留下来的口味发扬光大。”

两岸职工选手都表示,鱼丸制作交流的过程,增进了两岸的情感,也提升了大家的技能,希望类似赛事今后多组织。

虽说这是一场友谊赛,但主办方还是邀请了5位来自两岸的烹饪美食行家和10名现场观众作为评委,观摩并品尝每队现做的鱼丸,然后依据成形工艺、熟化冷却以及口感等标准,为每支队伍打分。最终,连江和马祖各有一支代表队获优胜奖。
