4日是二十四节气中的清明,在二十四节气中,清明是唯一既是节气又是节日的节气。注重孝道的福州人对清明格外重视,并形成了独特的清明习俗,其中有几样食品是必备的。

民俗专家齐上志告诉记者,每年清明节前后,家家户户都要去郊外踏青,为祖先扫墓、压纸、培土。福州人管扫墓叫“压纸”,习惯全家出动,不少在外地的亲人也会特地赶回来。扫墓后,要折松枝带回家,插在家门口,表明本户已履行扫墓祭祖的责任。

福州人扫墓祭祖还要供奉祭品,除了光饼、豆腐和面点,还有一样是少不了的,即“菠菠粿”。菠菠粿是将菠菜压榨成汁,掺入米浆内揉成粿皮,再以豆沙、萝卜丝等做成馅捏制而成。“另外,光饼相传为戚继光当年抗倭所创,为感念戚继光的功劳,福州人在其忌日,为其供上光饼。这个传统代代相传,形成了福州人在清明要供上光饼的习俗,体现了福州人重情感恩的传统。”齐上志说。
